VPR Cooks: Madelyn Cataford's Maple Glazed Roots

Winter is a time for root vegetables...and more root vegetables. If you're like us and are at a loss for what to do with these late-winter staples, Controller Madelyn Cataford suggested her amazing recipe for maple-glazed roots. Hope you enjoy it as much as we did!

Maple Glazed Roots

3 Tablespoons canola oil

3 cups peeled and chopped root vegetables, cut 1 inch thick or sliced 1/2 inch thick

6 scallions, sliced

3 teaspoons fresh ginger, minced

2 teaspoons garlic, minced

1/3 cup tamari

1/3 cup maple syrup

Mix together tamari and maple syrup, set aside. Steam root vegetables until just tender until they can be pierced with a fork. Heat a thick-bottomed skillet to medium high heat and add the oil. Once the oil gets hot, quickly add the root vegetables, scallions, ginger, and garlic. Brown veggies by stirring gently and frequently until most sides are brown. Add maple syrup and tamari and stir until all liquid is absorbed. Makes four servings as a side dish.
