You’d be excused if you couldn’t identify these as varieties of apples. There are hundreds, from the common MacIntosh and Red Delicious to the lesser known Smokehouse and Pixie Crunch.
Acclaimed food writer and James Beard Award-winning author Rowan Jacobsen has written a new book, “Apples of Uncommon Character: 123 Heirlooms, Modern Classics & Little-Known Wonders.” He joins us to share what he’s learned about apples that are best for baking, eating, saucing and storing away for later.
