VPR Cafe: A Magical Herb Farm

Chamomile dries on handmade racks in the greenhouse at Zack Woods Herb Farm in Hyde Park.

Zack Woods Herb Farm in Hyde Park started as a small farm 16 years ago, and now sells two tons of dehydrated herbs a year. The owners, Melanie and Jeff Carpenter, were inspired by noted herbalist Rosemary Gladstar, who Jeff Carpenter calls "the fairy godmother of modern western herbalism." To help meet the worldwide demand for dried herbs, the Carpenters have launched an herb farm coop to share their experience and knowledge with other growers. Melissa Pasanen, who writes for The Burlington Free PressSavorvore Section, tells us the story of Zack Woods Herb Farm.

The VPR Cafe is produced in collaboration with The Burlington Free Press.
