Salt cod salad is a modern incarnation of a classic New England dish. Cod was the most common form of protein available to New England's first settlers.

What were people in New England eating a few hundred years ago?

Candace Page, who writes for the Savorvore Section of the Burlington Free Press,  just got back from to New England Heritage's "Hearth & Home: The Historic New England Palate" conference, and joined VPR Café to talk about the relationship between our region's food and culture, and colonial cooking.

The VPR Café is made possible by Otter Creek Kitchenware in downtown Middlebury, offering over 70 lines of kitchenware.
